Most of what's available seems to substitute the cheese in for something else, and the effect is...bizarre, to say the least. Tarts and the like do it quite often, actually.
I think the one instance of this that I've tolerated was mousse made with ricotta, though that's likely because the dessert in question was also made with enough espresso to kill a man.
