It depends on the Pokemon. Most of the time they just need to reach a certain level, other times they need a specific stone or item. Or they might even need to be traded with someone for them to evolve, aru.

A bit different from the traditional kind of evolution then.

Yes, these creatures don't need thousands of years to change shape like the creatures on earth do.
