Saber is a very quiet and subtle lady. Having grown used to being able to mind her tongue while drinking as a king and as the leader of the Knights of the Round Table, she's not the type to place herself into compromising situations. However, she's grown to relax a little in this place. There are a couple of incidents where those around her have shaped how she acts when drunk. For example, when she's interacting with Nero, who's unusually bubbly and silly, Saber can slip into that same pattern.

So as long as Sion is as much of a gentleman as he has been in their previous talks, I imagine they would just talk about the usual stuff. Maybe if it gets a bit serious, the 'responsibilities' of being a leader. Really, she's the type to be quiet and just pipe in when spoken to during a casual drinking experience. So I'm afraid it'd be how Sion leads it.

Sion probably isn't likely to take it in a very serious direction for now, at least. A large part of the reason he invited Saber was just to get the chance to get to know her better; their previous conversations really did indicate they had a lot in common, and Sion did talk about some things in vague terms with her already, but he's very slow to open up to people and tends to be cautious in general, so he wanted to get a better feel for things. (If it weren't for his need to talk a little bit to someone, though- in canon he does have at least one person he can vent his doubts at when he needs to, even if Lucile's style of being encouraging is rather.... odd- he probably never would have opened up as much as he has in the first place....)

So yeah, basically I imagine it probably stayed in more casual territory, maybe straying no deeper than some inquiry about each others' worlds/homelands, that sort of thing.

....oh, and he undoubtedly asked where the whole "Saber" thing comes from, since he heard Shirou keep referring to her as that. ^_^;;
